ABOUT THE BOOK

EDITORIAL REVIEW
Do you love breads, cakes, pies, cookies, and other wheat products but can't eat them because you are allergic to wheat or sensitive to gluten? Perhaps you avoid wheat because you are concerned about your weight and need to cut down on carbohydrates. If so, the solution for you is coconut flour. Coconut flour is a delicious, healthy alternative to wheat. It is high in fiber, low in digestible carbohydrate, and a good source of protein. It contains no gluten so it is ideal for those with celiac disease. Coconut flour can be used to make a variety of delicious baked goods, snacks, desserts, and main dishes. It is the only flour used in most of the recipes in this book. These recipes are so delicious that you won't be able to tell that they aren't made with wheat. If you like foods such as German chocolate cake, apple pie, blueberry muffins, cheese crackers, and chicken pot pie, but don't want the wheat; you will love the recipes in this book! These recipes are designed with your health in mind. Every recipe is completely free of wheat, gluten, soy, trans fats, and artificial sweeteners. Coconut is naturally low in carbohydrate and recipes include both regular and reduced sugar versions. Coconut flour provides many health benefits. It can improve digestion, help regulate blood sugar, protect against diabetes, help prevent heart disease and cancer, and aid in weight loss.
USER REVIEWS
"Bruce Fife has done a great job in helping people to understand that coconut oil and other coconut foods are good for us. I have been aggressively integrating coconut into my diet with happy results. I believe that coconut oil, milk, flour & cream are really healthy food choices.

I bought this book hoping to find some really interesting main dishes that I could use to expand my use of coconut in daily food preparation. I was somewhat disappointed to find that the bulk of this cookbook is devoted to bread, muffins and desert items. This 160 page book has 50 pages of general information, about 90 pages of bread and dessert items, and 17 pages of main dish recipes with a predominant use of ground meat in those recipes. I seldom eat or cook with ground meat so these recipes were of little interest to me.

I suspect that anyone buying this book is interested in improving his nutrition, so if you are looking for a healthy bread/dessert recipe book, this cookbook may be perfect for you.

"Every recipe I have tried came out great! Definitely read the book part before the recipes because coconut flour can get lumpy if not stored right, etc. I LOVE this cookbook. Gluten-free, low-carb (I replaced sugar with xylitol or with recommended stevia recipes) and lots of fiber.
Only thing I don't like is I am not sure what kind of stevia he is using on the no-sugar recipe options so it's hard to know how much to use if I use stevia instead of xylitol. But besides that, it's great."

"I already have this book but bought this one for my daughter because she was always borrowing it. If you can't eat wheat flour or just want a healthy alternative then this book is a must. Coconut flour is high in fiber and tastes good but you can't just substitute it in your favorite recipes. This book explains how to use the flour and then has some excellent recipes. Peanut butter muffins are my favorite. I add a few chocolate chips to the recipe and I am enjoying every bite. I can't eat other grains at all so this book has been a blessing to me."

"What I appreciate most are the explanations concerning substituting other sweeteners, etc.; best success with temperature of ingredients; and the variety of different recipes."

"We know why we buy coconut flour but how do you use it?
Well this book tells you how. Its different and has to be used in its own way. From personal experience the recipes work. No more gluten, no more wheat, hurrah! "
